Malt Deserves Some Attention: Same Color, Different Story

Hops get the headlines. Malt deserves a seat at the table—and occasionally the dessert menu. If your favorite beer makes you think of bread crust or caramel, malt is a useful place to start the conversation.
Same color. Different story.
Color alone cannot tell you how a malt will taste. Malt producer Briess compares two of its own 20°L malts: Aromatic Munich, which is kilned, and Caramel Malt, which is roasted. They share a color rating but take different routes to your glass.
Briess describes Aromatic Munich as intensely malty and slightly sweet, while Caramel 20L has a candy-like, light caramel flavor. The processing matters: caramel malt is made under conditions that convert starches to sugars inside the kernel before caramelization. These are examples from Briess, not claims about any particular brewery’s recipe.
